Famous Christmas Cookies
4 c. sifted flour
1 tsp. soda
1 tsp. salt
1 c. shortening
2 c. brown sugar, packed
2 eggs
2/3 c. buttermilk
1 c. chopped pecans
1 c. candied cherries, quartered or
halved
2 c. dates, quartered
1 c. mixed candied fruit
Sift flour together with soda, salt. Cream shortening with sugar, until light and fluffy. Beat in eggs one at a time. Add milk and flour alternately. Stir in nuts, candy cherries, dates and fruit. Chill dough, drop by teaspoon full about 2 inches apart on greased cookie sheet. Top with cherry or nut and bake at 375 degrees for 8 to 10 minutes.

Chewy Christmas Ginger Cookies
2 c. sugar
1 c. molasses
1 c. Crisco
2 eggs
Mix well by hand and add:2 tsp. soda
4 c. flour
2 tsp. ginger
2 tsp. cinnamon
1 tsp. cloves
1/2 tsp. salt
Mix all together (by hand - not mixer). Roll into balls the size of a small walnut, then roll into red and green colored sugar. Bake at 350 degrees for about 9 minutes. The cookies will look not quite done, but not baking them until hard makes them chewy. The cookies will sink down and have cracks in them.

Christmas Breakfast Casserole
1 lb. bulk sausage
7 eggs
2 1/4 c. milk
1 tsp. salt
1 tsp. dry mustard
3 slices white bread, cubed
1 c. sharp Cheddar cheese, grated
Saute sausage; drain well. Beat eggs with salt, milk, and mustard. In 13 x 9 inch baking pan, layer bread cubes, sausage, and cheese. Pour egg mixture over all. Refrigerate overnight. Bake at 350 degrees for 40 minutes.

Christmas Quiche
1 1/2 c. Half and Half
4 eggs
1 c. (4 oz.) Swiss cheese, shredded
1 tbsp. flour
1/4 c. green onion, sliced
1 tsp. dried parsley
Pinch of nutmeg
Salt to taste
Pepper to taste
5 slices bacon, cooked
5 links sausage, cooked
Line 9-inch pan with pastry crust. Toss cheese with flour. Add onion, parsley, nutmeg, salt and pepper. Sprinkle on shell. Whisk eggs and Half and Half; pour over cheese mixture. Bake 35 minutes at 375 degrees. Place bacon and sausage on top; bake an additional 10 minutes. Serves 6 to 8.

Christmas Party Mixed Nuts
1/2 c. bacon grease
2 1/2 sticks margarine
1 tsp. Tabasco sauce
1 tsp. celery salt
1 tsp. garlic salt
2 tbsp. Worcestershire sauce
2 tbsp. peanut butter
1 box Crispix
1 box Cheerios
1 box Wheat Chex
1 box Rice Chex
1 can potato sticks
1 lb. English walnuts
2 lbs. cashews
2 lbs. pecans
Combine all ingredients together except cereal, potato sticks and nuts. Bring to a boil, let cool and pour over cereal, potato sticks and nuts. Bake for 2 hours at 200 degree oven. Stir often, use large pan to bake in. (The nuts are optional in amount.)

Christmas Tea Cakes
1 1/2 c. sugar
4 c. flour
1 tsp. soda
1/2 c. buttermilk
2 eggs
2 tsp. vanilla
1 1/2 c. shortening or butter
1/2 tsp. salt
In one bowl mix sugar, flour and soda. In another bowl mix buttermilk, eggs, vanilla, shortening and salt. Mix this well and then add your first bowl. Cut and roll out your cookies and bake at 350 degrees until done. Decorate any way you like.

CHRISTMAS MILLION DOLLAR FUDGE
4 1/2 c. white sugar
1 tall can evaporated milk
3 (4 oz.) bars German's sweet baking
chocolate
1 pt. marshmallow creme
2 tbsp. butter
Dash of salt
2 c. pecans or walnuts, chopped
1 (12 oz.) pkg. semi-sweet chocolate
chips
Before adding nuts you can divide recipe, pouring half into buttered 8 x 8 inch pan. Then add remaining half with nuts added, into 8 x 8 inch pan. For thinner fudge pieces you can use larger size buttered pans. Combine sugar, milk, butter and salt in large pot and bring to a boil. (Cook 5 minutes.) Place remaining ingredients in large bowl. Gradually pour boiling syrup over ingredients and beat until chocolate is melted. Stir in nuts. Pour into buttered pan and store 1 hour in cool place before cutting

Fruit Cookies
1 1/2 c. light brown sugar
1 c. Crisco
2 3/4 c. flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking soda (in a little
water)
2 eggs, beaten
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. mace
2 c. raisins (or 1 c. each raisins &
currants)
1 pt. jar mixed, crystallized fruit*
1 c. nuts, broken
Cream together brown sugar and Crisco. Sift together dry ingredients. Mix all. This is a very heavy batter. Can be mixed easier with your hands. Bake as small drop cookies in hot oven, 375 degrees, just until lightly brown. Grease and flour cookie sheets. Watch most carefully. These burn easily. *I use all the fruit the dough will hold. This usually means an extra medium jar of cherries, a flat jar of pineapple and some extra peel. Makes 72 to 100 cookies.
FRUIT SALAD
(CHRISTMAS SPECIALTY)
3 apples, peeled & chopped
3 oranges, peeled (use pulp only)
1 sm. can crushed pineapple
1 c. miniature marshmallows
1 c. pecans, chopped
1 box strawberry Jello, soft jelled
2 tsp. sugar
2 tsp. mayonnaise
Mix well and refrigerate.

Special Christmas Recipe

Take a large amount of giving And spread it generously; Read directions in the Good Book And apply them carefully. Garnish well with human kindness, On crystal leaves of cheer, And you'll have a batch of Christmas To last the coming year.

Christmas Cutouts
2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/3 c. oil
3/4 c. sugar
1 tsp. vanilla
1 egg plus milk to make 1/3 cup
Sift flour, baking powder, and salt into bowl. Add oil and blend with fork. Beat sugar, vanilla, and egg with milk until fluffy. Stir in dry ingredients. Chill one hour. Roll on floured board and cut as desired. Bake on greased cookie sheet at 400 degrees for 9 minutes. Frost with various colored icing.

CHRISTMAS MINIATURE FRUIT CAKES
1 lb. pineapple, candied
1 lb. red cherries, candied
1 lb. green cherries, candied
1 lb. dates, chopped
1 lb. nuts, chopped
1 lb. coconut
2 cans Eagle Brand flour
Add enough flour to hold together. Bake at 375 degrees for 15 minutes until set. Makes 4 dozen.

RED
VELVET CAKE
(My
husband's favorite)
1/2 lb. butter
1 1/2 C. sugar
2 eggs
1 1/2 teaspoon baking soda
2 T. cocoa
2 oz. red food coloring 1 teaspoon. vanilla
1 teaspoon. salt
1 C. buttermilk
2 C. flour and
1 1/2 T. vinegar
Make a paste with cocoa and coloring. Add to the creamed mixture of butter sugar
and eggs. Then mix salt and vanilla to the buttermilk. Alternate flour with milk
till all added. Last stir baking soda to vinegar and fold into mixture Pour into
greased and floured 9 inch pans and bake at 350* for 30 or 40 minutes, test for
doneness!

Old
Fashioned Popcorn Balls
4 qts. popped popcorn (16 c.)
3 c. Karo syrup
4 tbsp. butter
Pop popcorn and measure it into large mixing bowl. Pour syrup in pan and stir
until it come to a boil. Continue stirring until it forms a hard ball in water.
Take off heat. Mix margarine into syrup. Pour over popcorn. Butter hands and
shape into balls when the syrup is cool. Wrap individual popcorn balls in waxed
paper. Makes 12 large popcorn balls.

Company Green beans
1 (#303) can cut green beans, drained
1 (10 3/4 oz.) can cream of mushroom
soup
1 (8 1/2 oz.) can water chestnuts,
drained and finely chopped
1/2 of a 5 oz. jar Old English cheese
(sharp)
1/2 tsp. garlic salt
1 pkg. slivered almonds
Mix all ingredients together and put in a casserole dish. Bake at 350 degrees
for 30 minutes or until heated through. Recipe is easily doubled.

Sweet
Potato Casserole
4 c. mashed sweet potatoes
1 tbsp. vanilla
2 eggs
1 c. white sugar
1/2 c. melted margarine
Mix well, put in 9 x 13 greased pan. --TOPPING:--
1 c. brown sugar
1/2 c. flour
1 c. nuts
1/2 c. butter
Mix until crumbly. Put on top sweet potatoes. Bake at 350 degrees for 30 to 35
minutes.

ROAST OR BAKED HAM
15 - 20 lb. ham
Whole cloves
2 tbsp. flour
1 c. brown sugar
1 tbsp. mustard
1/4 c. vinegar
Select a ham, remove hock bone. Wash and soak 1 hour in hot water. Place 2 or 3
plys of brown paper in pan. Place ham on paper, skin side down. Place in cold
oven and turn switch to bake, at 300 to 325 degrees. Cook, allowing 18 to 25
minutes per pound. Before the last hour of cooking, remove skin and excess fat.
Score and stick whole cloves in ham. Rub with remaining ingredients. Return to
oven and bake 1 hour.

BAKED
TURKEY AND CORN BREAD DRESSING
1 qt. diced celery
1 c. finely chopped onion
1 c. butter
2 c. bread cubes
2 c. coarsely crumbled cornbread
1 tbsp. salt
2 tsp. poultry seasoning
1/2 tsp. pepper
1 1/2 c. broth, milk or water
12 to 14 lb. turkey
Cook celery and onion in butter over low heat, stirring occasionally, until
onion is tender but not browned. Blend bread cubes, cornbread, and seasoning.
Add celery, onion, and butter; toss lightly to blend. Pour broth gradually over
surface of bread mixture, tossing lightly. Add more seasonings as desired. If
using a frozen turkey, thaw completely. Remove neck and giblets and cook them
promptly; refrigerate until ready to use. Rinse the turkey. Bake in oven as
directed.

Easy
Turkey -Rice Stuffing
Pepperidge Farm stuffing
Uncle Ben's wild rice
1 can cream of mushroom soup
Water chestnuts
Bell pepper
Celery
Onion
Mushrooms
Cook stuffing and rice per directions. Chop water chestnuts, bell pepper, celery
and onion. Sauté sliced mushrooms in butter. Add all together and stir in soup.
Stuff turkey or bake in casserole dish.

Holiday
Chocolate butter Cookies
1/2 c. sugar
3/4 c. Land O'Lakes butter, softened
1 egg yolk
1 tsp. almond extract
1 1/2 c. all-purpose flour
1/4 c. unsweetened cocoa
Heat oven to 375 degrees. In large bowl combine all ingredients except flour and
cocoa. Beat at medium speed until light and fluffy (2-3 minutes). Gradually add
flour and cocoa until well mixed (2-3 minutes). Shape rounded teaspoonfuls as
desired (1 inch balls, 2-3 inch logs, balls flattened, balls with indentations,
etc.) or use cookie press. Place 1 inch apart on cookie sheet. Bake for 7-9
minutes or until set. Cool. Decorate with melted chocolate chips, melted almond
bark, nuts, colored sugars, candied fruit, candies, maraschino cherries, etc.
Yield: 3 dozen.

FRUIT
UPSET BASKET
1 can fruit cocktail, drained
2 bananas, peeled and sliced
1 apple, cut into sm. pieces
1/2 c. green grapes
1/2 c. strawberries
5 cherries, cut up
1/4 c. miniature marshmallows
1/2 c. whipped cream
2 drops red food coloring
Place in large bowl 1 can fruit cocktail, drained and add bananas, apple,
grapes, strawberries, cherries, marshmallows and whipped cream. Fold whip cream
into fruit, add food coloring. Refrigerate until ready to serve. Makes 4 to 6
servings.

FAMOUS
NEIMAN MARCUS COOKIES
(Recipe may be halved)
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal ***
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
***Measure oatmeal and blend in a blender to a fine powder.
Cream the butter and both sugars.
Add eggs and vanilla;
mix together with flour, oatmeal, salt, baking powder and soda.
Add chocolate chips, Hershey Bar and nuts.
Roll into balls and place two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees. Makes 112 cookies.
