HAWAIIAN CRESCENT SANDWICHES
1 can Pillsbury quick crescent dinner
rolls
1 can sm. chunk style ham (Hormel)
1/3 c. crushed pineapple, drained
1/2 c. shredded Monterey Jack cheese
1/4 c. diced green pepper
Press dough into 4 rectangles (7x4 inches). Place dough on ungreased cookie sheet. Press perforations to seal. In a bowl mix ham, pineapple, cheese and green pepper. Evenly divide mixture into rectangle; fold over to cover. Bake 13-18 minutes or until golden. Serve with fruit salad or tossed salad or a cup of soup.

NEW YORK SUBMARINE SANDWICHES
4 (6") or 2 (12") hoagie rolls
Olive oil
Red wine vinegar
Italian seasoning
12 slices provolone cheese
12 slices boiled ham
12 slices hard salami
2 sliced tomatoes
1/4-1/2 head shredded lettuce
1 sm. onion, sliced into thin rings
Split rolls. Sprinkle liberally with olive oil. Then vinegar and then the Italian seasoning. Layer 3 slices each of the provolone, ham and salami on each roll. (Or 6 each on the 12 inch rolls.) Place sliced tomatoes, onions and shredded lettuce on top of cold cuts. Slice 12 inch rolls in half to serve. Serves 4.

CLUB SANDWICH
3 slices 7-grain wheat bread
Philadelphia cream cheese
Freshly ground pepper
Coarsely chopped watercress
Thinly sliced tomato
Deli sliced turkey breast
Thinly sliced cucumber
1,000 Island dressing
Lightly toast bread. Spread thin layer of cream cheese on first slice. Grind some fresh pepper over the cheese. Layer the watercress, then the tomato. Add the 2nd slice of bread. Place a healthy portion of turkey on bread, followed by a layer of cucumber. Spread dressing on the 3rd bread slice, invert. Put 4 frilled toothpicks at equidistant points and cut diagonally in quarters. Arrange sandwich on a plate.

TEA SANDWICHES3 oz. softened cream cheese
1 tbsp. strawberry preserves
5 slices thin white bread
Combine 3 oz. softened cream cheese and 1 tablespoon strawberry preserves in a bowl. Spread mixture over 5 thin white bread slices. With a 1 1/2 inch round cutter, cut out circles in center of 5 or more slices; discard circles and place on top of coated bread. With a 3-inch round cutter, cut into circles. Makes 5.

BBQ BEEF SANDWICHES
1/2 lb. thin sliced roast beef
1/2 c. BBQ sauce
6 French bread rolls, split
1/4 c. green pepper strips
1 1/2 c. grated cheddar cheese
Preheat oven to 350 degrees. Combine meat, BBQ sauce and peppers. Heat thoroughly, stirring occasionally. Fill rolls with meat mixture, top with grated cheese. Wrap in foil, bake 10 minutes. Makes 6 sandwiches.

MONTE CRISTO SANDWICHES
3 eggs, beaten
1/3 c. milk
1/2 c. butter, softened
2 tsp. mustard
12 slices bread
6 slices cheese, cut in half
6 slices cooked ham
Confectioners' sugar
Preheat oven to 425 degrees. Beat together milk and egg; set aside. Blend butter and mustard together; spread on one side of each slice of bread. For each sandwich, top 1 slice of bread with 1 slice of cheese, 1 slice of ham, a second slice of cheese and a second slice of bread (buttered side toward filling). Dip each sandwich in egg mix. Brown on both sides on griddle. Place on cookie sheet and bake 8 to 10 minutes. Sprinkle with sugar to serve.

BLT SANDWICH
1 piece toasted bread
Lettuce, shredded
Onion, thinly sliced
Tomato, thinly sliced
Cover this with cheese sauce, topped with two or three pieces of crisp bacon. --CHEESE SAUCE:--
2 tbsp. butter, melted
2 tbsp. flour
Salt and pepper
Add one cup of milk. When thickened, add 1 cup grated cheese. Cook until thick, stirring all the time.

PIZZA SANDWICH
1 loaf frozen bread dough
1-2 tbsp. melted butter
1/2 tsp. garlic powder
1 tsp. herb seasoning
1/2 tsp. basil
3/4 c. grated cheese
1/3 lb. shaved sandwich meat
Thaw 1 loaf bread, roll out about size of cookie sheet. Melt butter and add seasonings. Spread mixture on bread. Lay meat on top, spread cheese over all. Roll up from narrow end and seal ends and edges. Place on greased cookie sheet. Bake at 350 degrees for 30 minutes or until brown. When cool, slice and
serve.

SPICY MEATBALL SANDWICHES
MEATBALLS:
1 lb. ground beef
1 egg
1 clove garlic, minced
1/4 chopped onion
1/2 c. Italian bread crumbs
1/4 c. milk
1 tsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
--SAUCE:--
1 clove garlic, crushed
1 tbsp. butter
1/2 c. ketchup
1/3 c. chili sauce (Heinz, tomato
based sauce)
2 tbsp. brown sugar
1 tbsp. Worcestershire sauce
1 tbsp. prepared mustard
1 tsp. celery seed (optional)
1/4 tsp. salt
Few drops hot pepper sauce
3 thin lemon slices
About 20 (1") meatballs
6 hard rolls or French bread

MEATBALLS:
Preheat oven to 375 degrees. Combine beef, egg, garlic, onion, crumbs, milk, Worcestershire sauce, salt and pepper. Mix lightly and well. Shape into about 20 meatballs. Place in a baking pan and bake 25 to 30 minutes. SAUCE: In a medium saucepan, cook garlic in butter for 4 to 5 minutes. Stir in ketchup, chili sauce, brown sugar, Worcestershire sauce, mustard, celery seed, salt, pepper sauce and lemon slices. Bring to a boil. Add meatballs. Cover and cook over medium heat for 20 minutes, stirring occasionally or until heated through. Remove lemon slices. Yield: 6 sandwiches.

7 - UP CHUCK-WAGON BBQ
1 lb. ground beef
1/2 c. chopped onion
1/3 c. chopped green pepper
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. chili powder
3 tbsp. flour
2/3 c. catsup
2 tsp. Worcestershire sauce
1 (7 oz.) bottle 7-Up
Cook meat, onion and green pepper until lightly brown. Stir in salt, pepper, chili powder and flour. Add catsup, Worcestershire sauce and 7-Up. Stir until smooth. Cook 15 minutes. Stir occasionally.

DEEP FRIED MOZZARELLA SANDWICHES
8 slices of bread
4 slices of Mozzarella cheese
Flour
1 egg
Oil
Remove crust from bread. Make four sandwiches with cheese and coat lightly and evenly with flour. Beat the egg in shallow dish. Dip the sandwiches so the sides and edges are all coated. Heat oil in deep fryer to 360 degrees. Deep fry the sandwiches until they are golden brown. Drain on paper towel and serve hot with salad.

SEASONED PITA SQUARES |
1-2 bags pita bread
Butter or margarine
Garlic powder - Parmesan cheese
Oregano- Sesame seeds
Preheat oven to 350 degrees. Use kitchen scissors, cut open each pita so you have 2 rounds each. Spread butter or margarine on insides of each round. Sprinkle garlic powder, Parmesan cheese, oregano and sesame seeds on top of margarine. Cut the pita rounds into little pieces. Put on cookie sheet. Bake for 5-10 minutes. Cool and serve. You may freeze them, if you wish. |
B. B. Q. VEGETABLE PITAS |
3 tbsp. canola oil
3 sm. onions, thinly sliced
1/2 c. barbecue sauce
1 c. diced red pepper
2 avocados, peeled, seeded and mashed
2 c. grated Mozzarella
6 pitas, sliced in half
In small saucepan, sauté onions in oil. Cook for 5 minutes and stir in barbecue sauce. Divide mashed avocado and Mozzarella evenly between pita halves. Distribute onions and red peppers in pitas and serve immediately. Serves 12. |
VEGGIE BURGERS |
2 c. rolled oats
1 1/2 c. grated carrots - 1/2 c. diced string beans
1/2 c. cabbage, diced - 1/2 c. broccoli, diced
1/2 c. mushrooms, diced
1/2 c. onions, diced - 1/4 c. water - 1/4 c. tamari
1 clove garlic, diced - 3 tbsp. flour
Salt and pepper to taste -- Oil -- Cheese
Mix all the ingredients together, shape into patties. Heat some oil in a skillet, brown patties on both sides. Place in a baking pan and bake 25-30 minutes. Top with a slice of Cheddar cheese 5 minutes before done. Great with mayonnaise, lettuce, tomato, and the works. |
| MEATBALL SANDWICH |
1 1/2 lb. hamburger
1 chopped onion
3/4 c. cracker crumbs - 2 eggs
1 tsp. celery seed - salt and pepper
1 jar spaghetti sauce
1/2 c. Parmesan cheese
Mix hamburger, onion, celery seed, eggs, cracker crumbs, Parmesan cheese and salt and pepper, real good. Make into balls, put into flat baking pan. Put in oven at 450 degrees until brown. Put into
Dutch oven, pour spaghetti sauce, simmer for about 1 hour with lid on. Serve on buns. |
EGG SALAD SANDWICH - a little different |
1 tbsp. butter
2 tbsp. sugar
3 tsp. vinegar
1/2 c. milk
1 tbsp. flour
1 egg, beaten
Combine all ingredients, stirring constantly. Boil until thick. Remove from heat and add: 9 eggs, hard-boiled
8 oz. cream cheese
2 tbsp. onion, minced
1 sm. can pimento, finely cut
Stir and refrigerate until all is cold. -- a good party snack |
| CRESCENT CHICKEN SQUARES |
1 (8 oz.) cream cheese, softened
5 tbsp. margarine, melted (reserve 1 tbsp.)
4 c. chicken or turkey, cooked and cubed
1/4 c. milk - 1/2 tsp. salt - 1/4 tsp. pepper
2 tbsp. onion, chopped
2 (8 oz.) cans Pillsbury crescent rolls
3/4 c. seasoned croutons, crushed
1 (10 3/4 oz.) can cream of chicken soup
Make sauce of soup, thinned to desired consistency with milk. Preheat oven to 350 degrees. Blend cream cheese and 4 tablespoons margarine until smooth. Add the chicken, milk, salt, pepper and onions. Mix well. Separate rolls into 8 rectangles (not 16) and firmly press perforations into seal. Spoon 1/2 cup chicken mixture into center of each rectangle. Pull the 4 corners of dough to top center of filling. Twist firmly together, then pinch seams to seal. Place square on two
un-greased cookie sheets or one large. Brush each one with remaining margarine. Sprinkle with crushed crouton crumbs. Bake 20 to 30 minutes or until golden brown. Warm the cream soup sauce, and serve over the top. Serves 8 for lunch. Can add shredded cheese to the chicken mixture. |
| TEX - MEX. BURGERS |
1 1/2 lb. ground beef
1 (4 oz.) can green chilies, drained
and chopped
3 oz. jack cheese, cut into 1/4" cubes
6 hamburger buns
6 tbsp. sour cream
6 tbsp. salsa
6 lettuce leaves (optional)
Heat grill or skillet. Shape ground beef into twelve 3 1/2" patties. Place six patties on waxed paper. Top each one with 1/6 of the chilies and cheese. Place remaining patties over stuffing. Press edges to seal. Grill or fry until burgers are done. Serve on buns with sour cream, salsa and lettuce. |
| MONTE CARLO SANDWICHES |
8 slices whole wheat bread, dry or old
4 slices ham, cooked
4 slices turkey breast, cooked
4 slices Swiss cheese
4 eggs, beaten
1/2 c. milk
1/4 tsp. salt
On each of four bread slices, place 1 slice each of ham, turkey and cheese. Cover with remaining slices of bread. In a bowl, beat eggs, milk and salt together. Dip each sandwich carefully into egg mixture, turning to dip each side. Fry in sprayed or oiled pan like you would French toast, making sure cheese is melted and meat is hot. May be put on sprayed cookie sheet; bake at 375 degrees, turning once. |
| VEGETABLE PITA POCKETS |
1/2 c. coarsely shredded lettuce
1/2 c. alfalfa sprouts
1/2 c. shredded Cheddar cheese
1/2 c. shredded carrots
1/4 c. raisins
1/4 c. chopped pecans
2 (6") pita bread
Yogurt dressing (follows)
Combine the first 6 ingredients, tossing gently. Cut bread in half; spoon vegetable mixture into bread, top with Yogurt Dressing. Serve immediately. Serves

| BARBECUED HAMBURGERS |
1 lb. ground beef
2 slices dry bread, crumbled
Salt and pepper
1 tbsp. grated onion
Little water to moisten
SAUCE;
1 c. chili sauce
2 tbsp. vinegar
2 tbsp. brown sugar
2 tbsp. Worcestershire sauce
1/2 c. water
Make hamburger patties by mixing meat, crumbs, salt, pepper, onion and about 2 tablespoons water. Shape into patties. Mix sauce ingredients in a frying pan. Put meat patties into sauce raw and simmer 45 minutes. Serve on buns. (Makes 5 to 6 patties.) |
| BEEF SANDWICH |
3 1/2 lbs. beef roast
2 c. water
1 tsp. oregano
1 tsp. onion salt
4 beef bouillon cubes
1 tsp. chili powder
1 tsp. garlic powder
Cook beef roast for 2 1/2 hours at 325 degrees. Cool and refrigerate overnight. Simmer other six ingredients 20 minutes, covered. Pour over thinly sliced beef (can freeze this way). When ready to serve, warm up and put on buns. |
| BEEF AND PORK BARBEQUE |
1 1/2 lbs. beef stew meat and 1 1/2 lbs. pork, cubed
2 c. onion, chopped - 1/2 c. brown sugar
2 tsp. salt -1 tsp. dry mustard - 3 tsp. chili powder
1/4 c. vinegar - 2 tsp. Worcestershire sauce
1 (16 oz.) can tomato paste
In crock-pot, combine all ingredients. Cook 1 hour on high setting; reduce heat to low setting and cook 7 to 9 hours, until meat is tender. With fork, stir to break up meat pieces. Enough for 16 hamburger buns. Oven Directions: In Dutch oven or large casserole, combine all ingredients. Bake at 325 degrees for 4 hours or until meat is tender. With fork, stir barbeque mixture to break up meat pieces. |
| HUMMUS SANDWICHES |
1 (15 oz.) can garbanzo beans, drained & rinsed
1 tbsp. toasted sesame seeds -- 3 tbsp. plain yogurt
2 tbsp. lemon juice -- 2 tbsp. less 1 tsp. olive (or vegetable oil)
1 tsp. sesame oil* (Asian - Chinese
foods, dark brown)
1 tbsp. soy sauce - 1/4 tsp. salt - 1/4 tsp. cumi - 1 scallion, sliced
1/2 tsp. minced garlic (or less to taste)
In food processor or blender combine garbanzo beans and sesame seeds; pulse process until medium texture. Add remaining ingredients and process until medium-smooth texture. If mixture is too thick, add water 1 teaspoon at a time; process until desired consistency is obtained. Serve in halves of pita pocket bread. First line the pocket with sliced tomato and/or lettuce; add hummus by generous spoonfuls. Keep leftovers refrigerated! |

| CUCUMBER AND MINT SANDWICHES |
1 seedless cucumber
32 sm. fresh mint leaves
1 stick unsalted butter, softened
8 thin slices firm white bread, crusts removed
8 thin slices firm whole wheat bread, crusts removed
Fresh mint sprigs - Thin orange slices - 1 tsp. grated orange zest
Peel the cucumber, halve lengthwise and slice crosswise as thinly as possible. In a small bowl, combine mint leaves, butter and orange zest and stir until creamy and blended. Spread each slice of white bread with about 1 1/2 teaspoons of the butter mixture. Arrange several slices of cucumber on each slice and top with the whole wheat bread. Cut each sandwich into quarters to make 4 squares or triangles. To serve, arrange sandwiches on a platter, alternating white and whole wheat sides of sandwiches, and garnish with mint sprigs and orange slices. Makes 32 tea sandwiches. |
PARTY SANDWICHES

1/2 lb. butter
1 tsp. Worcestershire sauce
1 onion, minced - 3 tbsp. mustard
3 tbsp. poppy seed
2 pkg. sliced Swiss cheese
1 1/2 lb. shaved ham
3 pkgs. small rolls
Melt butter and add next 5 ingredients. Slice bread rolls in half. (You will have the top and bottom in one piece). Spread butter mixture over bottom of bread. Add ham and layer with cheese. Place top of bread on cheese. Bake at 350 degrees for 10 minutes. Cut apart and serve. |
CHICKEN BUNS |
2 c. chicken, cooked and cubed
3/4 c. celery, finely chopped
1 tbsp. onion, finely chopped
1 c. Velveeta cheese, cubed
1/2 c. salad dressing
Mix all ingredients together; put on buns. Wrap in foil and put in oven at 325 degrees for 45 minutes
