As part of the Craft Yarn Council CIP, I have designed 3 beginner projects.  Each one requires, casting on, knit and purl stitches, minimal shaping, binding off and seaming.  They are knit on large needles with bulky yarn.  The idea is that the knitter practices all the basics covered in the class, but with a project that can be finished during the class.

I know some disagree with the bulky yarn/large needle idea, but I think a lot of projects don't get finished once the class ends.  The items I came up with are a hat, slippers and a vest.
