Carrot Cake

egg whites into the mixture of the rest of the ingredients. Bake 25-30 min. at 350.

Icing:

Put mixture on cake as soon as it is taken out of the oven. Put under the broiler until it bubles good or browns a little.

Eggnog Pound Cake

Cream butter and shortening; gradually add sugar. Beat well. Add eggs, beating after each addition. Add flour to creamed mixture alternately with eggnog. Mix until blended. Stir in flavorings. Pour batter into a greased bundt pan. Bake at 325 for 1 1/2 hours or until a toothpick comes out clean from the center. Cool in pan 10 minutes, then remove and cool on wire rack.

Fig Cake

Sift together dry ingredients & add oil. Beat and add eggs, then add buttermilk, vanilla, fig preserves, and nuts. Bake 325 for 1.5 hours.

Sauce:

Mix & boil for 3 minutes.

Coke Cake

Cream margarine and sugar thoroughly. Add eggs 1 at a time and beat well after each. Mix cocoa and coke in saucepan and bring to boil. Remove and add to creamed mixture. Add vanilla. Combine buttermilk and soda and add to cream mixture, alternately with the flour beginning and ending with flour. Put the batter, which will be thin, in a well-greased and floured 9x13" pan. Put marshmallows on top. Bake at 350 for 45-50 minutes. Leave cake in pan and ice while hot.

Icing:

Put margarine, cocoa, and coke in saucepan and bring to boil. Remove from heat and add powdered sugar and vanilla and beat well. Add nuts. Ice cake and cut into squares.

Coconut Cake

NOTE:Preparation needs to start sseveral days in advance.

Mix cake mix according to instructions (makes 2 layers) Let it cool completely.

Mix coconut, sour cream, & sugar. Refrigerate overnight.

Slice the two layers of cake to make 4 layers.

Reserve 1 cup of the mixture. Spread the remaining mixture between the layers & stack. Mix the reserved cup of mixture with 1 small carton of cool & put on the top and sides of the cake.

Store in the refrigerator 2-3 days.
