Mom's Recipes: Christmas Goodies
Pecan Logs
- 1 1/2 stick butter
- 1 Tbsp vanilla
- 1 cup pecans
- 5 Tbsp sugar
- 2 cups plain flour
- powered sugar
Melt butter. Mix all together (except powdered sugar) & shape in logs. Bake 325 for 30 minutes (12-20 minutes). While hot roll in powered sugar. Let cool & roll in powdered sugar again.
Fig Cake
- 2 cups flour
- 1 tsp slat
- 1 tsp soda
- 1 1/2 cup sugar
- 1 cup cooking oil
- 3 eggs
- 1 cup fig preserves
- 1/2 Tbsp cinnamon
- 1/2 Tbsp cloves
- 1/2 Tbsp nutmeg
- 1 cup buttermilk
- 1 cup nuts
- 1 Tbsp vanilla
Sift together dry ingredients & add oil. Beat and add eggs, then add buttermilk, vanilla, fig preserves, and nuts. Bake 325 for 1.5 hours.
Sauce:
- 1/2 cup sugar
- 2 Tbsp corn syrup
- 1/4 cup butter
- 1/2 stick oleo
- 2 tsp vanilla
- 1/4 tsp soda
Mix & boil for 3 minutes.
