Peanut Butter Pinwheels

Ingredients:
Two eggs whites 1/2 teaspoon vanilla About one pound confectioners sugar Creamy peanut butter Directions: Beat egg whites until very stiff. Add vanilla. Beat in confections sugar until mixture is consistency of pie dough. (At the end, you'll have to knead it in with your hands). When dough feels right to roll out, place on waxed paper and roll to about 3/8-inch thickness. (This is a little tricky the first time, as you don't want too much sugar; it will crack when rolled.) Spread peanut butter on rolled dough. Carefully roll up like a jellyroll, wrap in waxed paper and refrigerate about one hour. Slice into 1/4-inch rolls and place on plate to serve.
