Beer Can Chicken

Here is my recipe for a beer can chicken on the smoker.

1 whole chicken brined ( see brine recipe below )
1 can of beer
1 small potato
rub
cooking spray

Place the opened can of beer in the chicken rack. Take the chicken out of the brine and slide it on to the rack so it sits upright. Stuff the small potato into the neck cavity so that it fits tightly. Spray the chicken all over with cooking spray. Apply your favorite rub and let sit for 30 min.
Prepare your smoker for 300° F. Add the wood ( I prefer apple wood for poultry )
Smoke at 300° F until breast temp is 180°F . About 2-3 hours. I recommend using a drip pan under the chicken because the beer and chicken juices will make quite a mess.

Brine

1 cup kosher salt
1 gallon drinking water
1 cup chopped garlic

Combine ingredients into a large food safe container. Place the chicken in the water so that it is entirely covered. Let sit in the water for at least one hour.
