Beef Jerky
Jerky is one of the simplest and quickest things you can make with your smoker. Its very tasty too. I can make up a pound of jerky in about 2-3 hours. Let me tell you my method...
1. Start with a nice beef roast, I prefer top sirloin or pot roast.
2. Prepare the marinade. Here is my recipe, but you can experiment and make your own if you want.
1 cup worstershire sauce
1/2 cup hot sauce
1/2 cup water
1 tbs onion salt
1 tbs garlic powder
Combine the ingredients in a none plastic bowl.
3. With a very sharp knife, slice the roast in slices about 1/8 to 1/4 inch thick. You can slice across the grain, or with it depending on the size of the roast, I have had success either way. Across the grain makes it more tender.
4. Place the slices in the marinade and let them sit for at least 30 min. I let mine sit for 1 hour.
5. Place the slices on a jerky rack. You can get these aluminum mesh racks at Walmart or the grocery store. I use 3 or 4 of them for a nice batch of jerky.
6. Prepare your smoker at 200 degrees. Add the wood. I prefer to use oak and hickory. I also like Jack Daniels wood pellets too.
7. Put the racks in your smoker and keep the temp at 200. The jerky should take about 3 hours, but watch it after 2 hours to check the doneness. I take mine off when it is dark red and it does not bend when you pick it up.
8. Once it is done, take the racks out and let them cool on the counter. When it is cool and you have ate your fill, place the jerky in a plastic baggie and store in the refrigerator.
