Prime Rib

Here are the basic techniques for making a delicious smoked prime rib.

1. Select the meat from your butcher shop.

2. I don't like a spicy rub on my prime rib, so here is the recipe I use to rub mine.

1/2 cup paprika

1 Tbs onion salt

1 Tbs garlic powder

1 Tbs black pepper

3. Apply the rub to your meat. I don't refrigerate my prime rib after rubbing. Just let it sit for about 1/2 hour.

4. Prepare your smoker at 225° F. Add the wood.

5. Place the prime rib on the smoker with the fat side up and the bone side down. Insert the thermometer probe in the center of the roast. You will definetly want to catch the drippings. I place an aluminum pan under the roast. I use the drippings as au jus later. Add a little water in the pan to start so they don't burn.

6. Prime rib is naturally tender so you don't have to cook it long. I recommend that you at least cook it to 140° F internal. I take mine off at 145°F and it is still slightly pink on the insides. It takes about 2 hours on average.

7. Take the prime rib out and wrap it in foil for 1/2 hour. Unwrap and slice in 1 inch thick slices. Serve with the juices and enjoy!
