Tater Salad
Here is my recipe for the old fashioned tater salad.
1 cup Mayonnaise
1 Tbs yellow mustard
1 cup minced onion
2 cups chopped celery
2 Tbs white vinegar
2 tsp salt
1/4 tsp pepper
4 hard-cooked eggs, chopped
3 lbs. potatoes, cooked, peeled and cubed (about 6 cups)
paprika for garnishing
Combine all main ingrediants in a large bowl. Mix well. Sprinkle top with paprika. Cover and refrigerate for at least 4 hours. Best if made the day before serving.
