Casseroles

 

                   Lorrie's Recipe             Broccoli and Cheese Casserole

1 cup minute rice
1 cup water
2 oz. Pimento peppers
4 oz. Cheese whiz
1 can cream of chicken
½ cup chopped onion
½ stick margarine
1-10 oz. package frozen chopped broccoli

Bake at 350 degrees – 45min. to 1 hour

 

 

Peggy's Recipe                        Taco Casserole

1-2 lb. Ground beef
1 small onion
¼ bell pepper

Mix these 3 ingredients and brown. Salt to taste.

1 can Ro-tel diced tomatoes/green chilies
1 can cream of mushroom soup
1 can cream of chicken soup
8 oz. Velvetta cheese
Bag Nacho Cheese Chips-Dorito Brand

Crush half bag of chips and put into bottom of casserole dish.  Top with meat mixture, then the soups, and tomatoes. Grate cheese and sprinkle on top. Last, crush remaining nacho chips and put over all the top. Bake at 350 degrees for 20 minutes.

 

 

Lorrie's Recipe                   Mexican Corn Casserole

1 can Mexicorn 
1 can cream of celery 
1/4 stick margarine 

1 bag yellow mahatma rice (cooked)
1/2 cup cheddar cheese or can use cheese whiz

Bake at 350 degrees for 40 minutes.  Top with American cheese slices for 5 minutes.

 

 

Mama's Recipe                  Sweet Potato Casserole

3 cups mashed sweet potatoes 
1 cup sugar 
1/2 teaspoon salt 
2 eggs 
1 stick margarine 
1/2 cup milk 
1 teaspoon vanilla flavoring   
Mix ingredients.

Topping 

1 cup brown sugar 
1 cup chopped pecans 
1/2 cup flour 
1/2 cup melted margarine. 

Mix & pour on top.  Bake 30 minutes at 350 degrees.

 

 

Donna's Recipe                  Hash Brown Casserole

1 stick butter, melted 
1 pint sour cream 
1 can cream of chicken soup 
1 teaspoon salt 
1/2 teaspoon onion salt 
2 cups finely shredded Cheddar cheese 
1 large bag hash brown potatoes  (approx. 2 lb)

Mix all ingredients and add potatoes.  Pour into greased (I use cooking spray) casserole dish.  Cover top with plain bread crumbs.  Drizzle butter over top.  Bake at 350 degrees for 1 hour.

 

 

Peggy's Recipe                          Chicken Ro-tel

4 chicken breast
1 pkg. Vermicelli noodles
1 can small English peas
1 can Ro-tel diced tomatoes/green chilies
1 lb. velvetta cheese - diced

Boil chicken breasts for 1 hour and dice, save broth.  Boil Vermicelli noodles in chicken broth - add water if needed.  Drain.  Add chicken, small English peas, 1-10oz. can Ro-tel diced tomatoes & green chilies, 1 lb. diced velvetta cheese, stir until cheese melts. (Can melt cheese and then add to other ingredients)

 

 

Donna's Recipe                        Chicken Casserole

3 chicken breasts, cooked and chopped

Chicken:  place in pan cover w/water.  Add 1 1/2 tsp. meat tenderizer and 1/2 tsp. garlic powder.  Boil until done.

1/2 cup cracker crumbs
3 hard-boiled eggs, chopped
1/4 tsp. onion salt
1 can cream of chicken soup
1/2 cup salad dressing or mayo

Mix and put into casserole dish.  Top with cracker crumbs, bread crumbs, or potato chips.  Bake 20 minutes at 350 degrees.

 

 

Dreama's Recipe              Creamy Chicken Casserole

3 cups Cooked Chicken
1 can Cream of Chicken Soup
8 oz. Sour Cream
1 tablespoon Poppy Seed
1/4 cup melted butter
Ritz Crackers (approx 40)

Boil chicken and chop.  Mix together chicken, can of soup, sour cream and poppy seed.  Put in greased casserole dish.  Mix crackers and butter.  Spread on top.  Bake 30 minutes at 350 degrees.

 

 

Jean's Recipe                     Cabbage Casserole

1 medium head of cabbage
1/8 tsp. powdered red pepper
1/4 tsp. salt
1 can tomato soup
1 can cream mushroom soup
1 lb. ground beef
1 onion, chopped

Chop cabbage, brown ground beef and drain, add other ingredients mix well.  Pour into large casserole dish greased.  Bake 1 1/2 hours at 350 degrees covered last 30 minutes.  Remove cover and top with cheese and onion rings.

 

 

Donna's Recipe                     Chicken Spagetti            

2 or 3 lbs. skinless, boneless chicken breast
2 or 3 tsp. meat tenderizer (1 tsp per lb meat)
8 oz. thin spagetti, broken up 
1 stick butter
1 lb. Velvetta cheese, cut into cubes or pieces
1 can English peas, drained
1 can Hunts Petite diced tomatoes

Boil chicken in water until done.  Reserve 1-1/2 quarts of chicken broth for spagetti.  Chop chicken in chunks or smaller pieces.

Cook spagetti in reserved chicken broth.  Don't drain.  Add velvetta cheese and butter to spagetti.  Stir until melted.  Add chicken, peas, and tomatoes.  Pour into casserole dish.  Top with bread or cracker crumbs and butter.  Bake at 350 degrees for 25-30 minutes.

 

 

Ann's Recipe                 Sausage Cheese Casserole              

2 lb sausage
2 cups cheddar
1-8 oz. cheese whiz
small onion
1/2 bell pepper
1 1/2 cups cooked minute rice
2 cans cream of chicken
1 large jar pimentos

Bake at 400 degrees until top gets a little brown.
