Peggy's Recipe                           Chocolate Pie

3/4 cup sugar 
2 tablespoons corn starch 
2 tablespoons flour 
2 tablespoons cocoa 
2 eggs separated 
2 tablespoons margarine 
2 cups milk

Combine sugar, corn starch, flour, and cocoa. Add beaten egg yolks and milk. Cook over medium heat until thick, stirring constantly. Remove from heat, add margarine and beat until melted. Pour in baked pie shell. Add meringue-Beat egg whites until stiff. Slowly add ¼ cup sugar. Whip until stuff peaks form. Spread on top and bake in a pre-heated 425 degrees oven for 5 minutes.

 

 

                                                    Banana Pudding

1/2 cup sugar 
2 tablespoons flour 
1/4 teaspoon salt  
2 cups milk 
1/4 cup sugar 
3 eggs - separated 
1 teaspoon vanilla extract 
50 vanilla wafers 
4 medium ripe bananas

Mix sugar, flour and salt together in a saucepan. Slowly add milk, stirring till smooth. Heat to a full boil over medium high heat. Stir constantly. Reduce heat to low and continue to cook for 15 minutes longer; stirring occasionally. Beat egg yolks in bowl. Add a little of the milk mixture to the yolks; stir. Add yolks to milk mixture gradually. Continue to cook for 5 minutes longer. Remove from heat and add vanilla.

Line bottom of 1 quart casserole dish with 25 wafers. Top with 2 sliced bananas. Cover with 1/2 (1 cup) of custard mixture. Repeat layers, ending with custard. Beat egg whites until stiff. Slowly add 1/4 cup sugar. Whip until stiff peaks form. Spread on top of pudding and bake in a pre-heated 425 degree oven for 5 minutes or until delicately brown.

 

 

Nana's Recipe                          Lemon Mousse'

1 can carnation milk 
1 1/2 cups sugar 
2 tablespoons lemon juice 
1 pack gram crackers

Crumble gram crackers with rolling pin put ‘em in a flat container.  Pour milk in bowl mix til thick.  Add sugar and lemon juice.  Pour over gram crackers, put more gram crackers on top.                              

 

 

Mama's Recipe                          Coconut Cake

1 yellow cake mix
1 can cream of coconut
1 can Eagle brand milk
1 small pkg frozen coconut
1 small container Cool Whip

Mix cake mix according to directions on box and bake in an oblong pan.  Let cake cool, mix cream of coconut and Eagle brand milk together.  Poke holes in cake and pour mixture over the top.  Add Cool Whip then sprinkle coconut on top.

 

 

Lil's Recipe                     Old Fashioned Tea Cakes

3/4 cup sugar
1/3 cup shortening
6 Tbs. butter or margarine, softened
1 egg
1 tablespoon milk
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Cream sugar, shortening, and butter or margarine until fluffy.  Add egg, milk and vanilla and beat well.  Stir together flour, baking powder and salt, stir into creamed mixture.  Cover and chill at least 3 hours.

Working with half the dough at a time, on lightly floured surface roll to 1/8 inch thickness, cut with cookie cutters into desired shape.  Place on ungreased cookie sheet.  Bake at 375 degrees till set, but not browned, about 8 minutes.  Makes about 4 dozen cookies.

 

 

Kim's Recipe               Oreo Cookie Cake

1.  1/2 gallon vanilla ice cream
2.  Smucker's fudge topping
3.  Large cool whip
4.  1 stick margarine, melted
5.  1 cup peanuts, chopped
6.  1 1/4 lb. Oreos, crushed

Mix # 4, 5 & 6 and spread in bottom of pan.  ( Save 1 cup for topping. )  Soften ice cream, slice & spread over cookies.  Spread fudge topping over ice cream.  Spread cool whip over fudge topping.  Sprinkle reserved cookie mix on top.  Freeze hard.

Kim's note:  I used pecans instead of peanuts.  And I also allowed the ice cream to refreeze some before spreading the fudge topping on it.  It makes a lot, so use a large dish . . . Hope you enjoy it.

 

 

Donna's Recipe             Texas Sheet Cake

2 cups flour (sift)
2 cups sugar
1 tsp soda
1/2 tsp salt
2 sticks butter (melt)
1 cup water
4 Tbs. cocoa

Add dry ingredients - then add 1/2 cup buttermilk, 2 eggs, 1 tsp vanilla.  Bake in sheet cake pan or 9X13 (grease & flour)  350 degrees  (20-25 min.)

Icing:  Bring to a boil - 1 stick butter, 4 Tbs. cocoa, 6 Tbs. buttermilk.  Add:  1 box of powdered sugar, 1 tsp. vanilla & 1 cup nuts

 

 

Donna's Recipe                        Chocolate Chip Pie

1/4 cup butter, melted
1 cup sugar
1/2 cup flour (all-purpose)
2 eggs, slightly beaten
1/4 tsp. salt
1 tsp. vanilla
1 cup chopped nuts (optional)
6 oz. chocolate chips (I use milk chocolate)

Combine ingredients and pour into pie shell.  Cook at 400 degrees for 10 minutes and 375 degrees for 30 minutes.

 

 

Dreama's Recipe                Cherry Dream Cake

Crust:  
2 sticks of butter
1 cup of pecans
1 cup flour

In cake pan melt 2 sticks of butter.  Pour in pecans and flour.  Stir until mixture has a pasty texture (use more or less flour if needed) just so butter is absorbed.  Spread evenly and bake until crust is golden brown.  Take out of oven and let cool while you prepare filling.

Filling:
1 package of cream cheese
1 box of Dream Whip
1 can of Eagle Brand milk
1/2 box confectioners sugar

Mix whole box of Dream Whip as directed on package.  Add cream cheese and eagle brand milk.  Beat well until smooth.  Add confectioners sugar.  Pour over crust, cover and refrigerate overnight.  Before serving spread Cherry Pie Filling on top.

 

 

Barbara's Recipe             Fruit Salad with Orange Dressing

2 - 6.1 ounce cans mandarin oranges, drained 
2 - 15 ounce cans sliced peaches 
2 - 1 pound 4 ounce cans pineapple tidbits, drained 
1 apple with skin, diced 
¾ cup sour cream 
1 - 3.4 ounce box instant vanilla pudding 
1 ½ cups milk 
1 - 6 ounce container frozen orange juice concentrate (do not add water) 

Mix all fruits together in a large bowl. Whisk together pudding mix, sour cream and milk. Stir in orange juice until melted. Pour over fruit and refrigerate overnight. You can add any fruit that you desire. Maraschino cherries and red seedless grapes add color.

 

 

Jean's Recipe               Seven Minute Frosting

2 cups sugar
3/4 cup water
1/2 cup powdered sugar
dash of salt
4 egg whites beaten
1/2 tsp. vanilla
1/2 tsp. almond
1/2 tsp. cream of tartar

Cook granulated sugar and water, until it spins a thread, pour over well beaten egg whites, beat well, add tartar and extract.

 

 

Dreama's Recipe                    Lemon Pie

1/3 cup of lemon juice
1 package of cream cheese
1 can of eagle brand milk
Mix together and pour in graham pie shell.  Chill.

 

 

Dreama's Recipe                       Cheesecake Bars

1 Yellow Pillsbury Cake Mix
4 eggs
1 stick margarine
1 box confectioners sugar
8 oz cream cheese
vanilla flavoring

Crust:  Mix cake mix, margarine (melted), and 2 eggs together.  Batter will be very stiff, spread in a 13X9 cake pan.

Topping:  Mix cream cheese, 2 eggs, 1 box of confectioners sugar, and 1 tsp vanilla until thin (like condensed milk).  Pour onto crust and bake at 350 degrees for 35-40 minutes until golden brown.

(I learned that my aunt Judy has this recipe and she adds 1 cup of pecans and calls it "Groovy Buttercake.")

 

 

Ida's Recipe                      Strawberry Delight

Cool Whip
Vanilla wafers
1 1/4 cups confectioners sugar
2 eggs
1 tsp. vanilla
1 stick soft margarine
2 large cans frozen strawberries, drained
1 can angel flake coconut

Layer an oblong pyrex with vanilla wafer crumbs.  Combine next four ingredients and beat until and fluffy.  Spread over wafer crumbs.  Top with layer of drained strawberries, spread coconut over strawberries.  Cover with cool whip and refrigerate.

 

 

Donna's Recipe              Punch Bowl Cake

Bake one yellow cake mix per box instructions
1 large Cool-Whip (thawed)
1 large can crushed pineapple (chilled)
1 frozen container strawberries (thawed) coconut
1 large box instant vanilla pudding

Use 1/2 of all ingredients in the first layer:
Crumble 1/2 cake in bottom of punch bowl, top with 1/2 vanilla pudding, next sprinkle some of the coconut, top with 1/2 of the strawberries, and almost half the Cool-Whip. Repeat layers. Use a little over half the Cool-Whip for the final layer. Sprinkle pecans over top for decoration.  Enjoy!  (You may vary ingredients per your family tastes). The original recipe called for cherries instead of strawberries.

 

 

Malinda's Recipe             No Name Cake


Bottom:

1 stick margarine
1 egg
1 box yellow cake mix

Melt margarine in oven in a 9X13 inch Pyrex dish.  Beat egg and put into Pyrex dish on top of margarine.  Blend cake mix into margarine and egg.  This will be stiff and crumbly.

Topping:

2 eggs
8 ounces cream cheese (room temperature)
1 box confectioners sugar

Mix with mixer.  Pour over bottom layer.  Bake at 350 degrees for 40-45 minutes.

 

 

Vicky's Recipe                    Chess Pie       

3 whole eggs
1 1/2 cup sugar
1 teaspoon vanilla
1 stick soft butter
1 tablespoon meal
1 teaspoon vinegar
2 tablespoons buttermilk

Mix all real good and pour in an unbaked pie shell.  Bake 300-325 degrees for 1 hour or until done.  (variation) Replace buttermilk with 5 tablespoons sweet milk.  Makes 1 pie.

 

         

 

Catherine's Recipe               Cherry Dessert

1 can cherry pie filling
1 8oz. package cream cheese
1 small carton Cool Whip
1/4 cup sugar
1 graham cracker crust

Soften cream cheese, (I leave it out for a little while).  Mix the cream cheese with Cool Whip, add sugar.  Pour in the graham cracker crust.  Top with Cherry Pie Filling.

Sometimes I use Strawberry Pie Filling or Blueberry Pie Filling.  I use this same recipe for the filling and slice bananas on the bottom and pour Blueberry Pie Filling on top.

 


 

Nana's Recipe              Chocolate Oatmeal Cookies         

1 stick margarine
1 cap full vanilla flavoring
1/2 cup milk
2 cups sugar
5 level tbs cocoa, dinnerware not measuring spoon
2 cups one minute oats
1/4 cup peanut butter

Melt 1 stick margarine, add vanilla flavoring, milk, sugar and cocoa.  Stir constantly, when mixture comes to a rolling boil, (has pits in it), continue to stir and time for 1 1/2 minutes.  Remove from heat and add oats and peanut butter, let stand for 2-3 minutes, then with a small spoon drop onto wax paper.

                                         

 

Vicky's Recipe              Banana Split Cake              

First Layer:
2 cups graham cracker crumbs
6 TBS melted margarine
6 TBS powdered sugar
Mix and put in oblong cake pan

Second Layer:
3/4 cup butter
3 cups powdered sugar
3 TBS milk
Mix and spread over first layer.

Instructions:
Third Layer:  4 bananas sliced; 1 layer can crushed pineapple (drained); Layer bananas and put pineapple on top of bananas.  Fourth layer:  1 Cool Whip (8oz); Spread on top.  Spread chocolate syrup and sprinkle with nuts.  Place cherries on top.  Keep refrigerated.
