Fried Chicken Balls Recipe (Chicken Croquettes).

Ingredients

  • butter 3T.
  • Flour 1/4cup
  • milk 1/2 cup
  • chicken broth 1/2 cup
  • parsley 1T
  • lemon juice 1t
  • onion 1t
  • salt 1/4t
  • paprika dask
  • nutmeg dask
  • pepper dash
  • cooked chicken 1 1/2 cups diced
  • eggs 2
  • water 2T
  • bread crumbs -
    Procedures
  • Melt 3T butter, blend 1/4 cup flour, add 1/2 cup milk, 1/2 cup chicken broth, cook and stir until mixture thickens and bubbles. (~1min). 1T parsley, 1t lemon juice, 1t onion, 1/4 t salt, dask of paprika, nutmeg, pepper. (cool) add 1/12 cups of finely diced chicken.
  • -Salt and chill.
  • Wet hands, shape valls ~8-12. Roll into bread crumbs. (crushed crackers). Dip into 2 beaten eggs & 2 T water. Deep fry - 2 1/2 - 3 min (365 degree oil), drain.

    Options

    You can use left over Thanksgiving turkey meat instead of chicken.
