2# Flank Steak 10-12 Fresh Basil leaves 5-6 slices Swiss Cheese 1# of Italian sausage links or bulk 1 large onion thin sliced 8 cloves garlic (smashed) 1 cup dry red wine 1/2 cup red wine vinegar 1/2 cup beef broth 1# fresh mushrooms (whole or halved) Heat oven to 350 degrees. Flatten or butterfly the flank steak to about 3/8" thick. Cover with basil leaves, Swiss cheese, and sausage. Roll and tie with string. Brown rolled steak on all sides in Dutch oven and remove from pan. Add onions to pan and cook 10-15 minutes until light brown. Add garlic, cook 1 minute. Add wine, vinegar, broth, and two bay leaves plus a few more basil leaves. Return steak to pan and add mushrooms. Bake at 350 degrees 1 1/2-2 hours or until steak is almost fork tender. Remove steak and mushrooms from pan and let rest while reducing remaining sauce to a thick consistency.
