PORTLAND BUTTER AND CHEESE ASSOCIATION

This cheese factory was inspected by the state commissioner on 16 Nov 1894.  His report, as found in the State Commissioner's Report #6, stated the following:

The manager was W. A McCaig.

The cheesemaker was W. A. McCaig and he has not attended the Dairy School at the University of Wisconsin.

There were 28 patrons who were paid on a pooling system.

The milk from 250 cows was sent to the factory.  Their milk amount to about 2500 pounds a day.  From this milk, about 265 pounds of cheese was produced each day.

The Babcock Test was used only on a irregular basis.  The Wisconsin Curd Test was not used.

The factory produced soft cheese in flat shapes for the home market.
