Ingredients:
2 Eggs
2 Cups Flour
1 Tsp. Baking Powder
1 Tsp. Sugar
1 Tsp. Salt
2 Cups Milk (approx)
Procedure:
Beat eggs slightly. Add dry ingredients, then most of the milk. Stir and add milk until the consistency is like cake batter.
Heat large, well-seasoned cast iron skillet that is 1/2 full of oil.
Add the entire batch of smaddum to the oil when a test drop sizzles. Oil should be just about smoking, but not quite.
Let the mixture fry a bit, until you think the bottom is browned.
With two serving spoons, chop up chunks of batter, turning each of them over to fry. The batch should like a bit like scambled eggs, but pancake like. :-)
Remember to chop fast, many a batch has been burned!
