Hawaiian Chicken Kebabs

This one is a family favorite, you have to try this!!!!!!

(serves 8)

10 chicken breast, boned and cut into 1 inch cubes
5 green peppers, cut into eighths
16 small onions, peeled and halved
24 pineapple chunks
3/4 cup soy sauce
1/2 cup pineapple juice
1/2 cup Benedictine
2 garlic cloves, crushed
1 teaspoon dry mustard
1 teaspoon cardamom
1/2 teaspoon freshly ground black pepper
 Drain the pineapple chunks, reserving 1/2 cup of the juice. Place chicken, peppers, onions and pineapple chunks in a bowl. Make a marinade by combining the soy sauce, reserved pineapple juice, Benedictine, garlic and spices. pour this mixture over the chicken, etc., in the bowl and marinate for 2 hours or more.
 Alternate the chicken on skewers with pieces of pepper, onion and pineapple. Broil over medium hot coals approximately 15 minutes, turning the skewers frequently only until the chicken is white clear through. Do not over cook. Serve hot.
