Drain the pineapple chunks, reserving 1/2 cup of the juice. Place chicken, peppers, onions and pineapple chunks in a bowl. Make a marinade by combining the soy sauce, reserved pineapple juice, Benedictine, garlic and spices. pour this mixture over the chicken, etc., in the bowl and marinate for 2 hours or more.10 chicken breast, boned and cut into 1 inch cubes
5 green peppers, cut into eighths
16 small onions, peeled and halved
24 pineapple chunks
3/4 cup soy sauce
1/2 cup pineapple juice
1/2 cup Benedictine
2 garlic cloves, crushed
1 teaspoon dry mustard
1 teaspoon cardamom
1/2 teaspoon freshly ground black pepper
