Cook-Ahead Pork Kabobs
 Here is a recipe that you need to try. It is rather unusual, but let me tell ya', it sure does taste good!!!!
 
3# fillet of pork, cut into 1 1/2-inch cubes
1 large onion, crushed
5 garlic cloves, crushed
Juice of 2 oranges
Juice of 1 lime
3 tablespoons of melted butter
2 tablespoons flour
3 tablespoons sugar
3 ripe bananas
1/2 cup shredded coconut
 Place the meat in a large bowl. Mix the orange and lime juice with the crushed onions and garlic. Pour this marinade over the pork pieces and marinade them for 5 hours, or over night.
 Heat the butter in a skillet over medium coals. Drain the pork, reserving the marinade. Pat the cubes dry, and sauté' them in the butter until they are no longer pink inside. Remove the pork from the skillet. Sprinkle the flour over the butter, letting it brown slightly. Stir in the reserved marinade and the sugar, and continue to stir until the mixture boils and thickens. Set the sauce aside to keep warm.
 Peel and cut the bananas into 1 1/2- inch pieces. Coat each banana section with shredded coconut. Alternately thread pieces of pork and pieces of banana on 8 individual skewers. Place over slow coals, turning frequently, until the pork is hot and the coconut is brown. Serve with the warm sauce.
