No need to carry extra skillets on camping trips when foil wrapped potatoes are so easy to prepare. Fold a two foot piece of tin foil in half, and crimp the 2 side edges to form a 12-inch square pocket. Place 4 peeled and thickly sliced potatoes inside and top with one of the following savory herb combinations. Crimp to seal the open edge of the pocket and wrap the whole pouch in heavy-duty quilted foil.

Herbed Potatoes
1 1/2 tablespoons butter
1 small onion, peeled and chopped
1 teaspoon fresh sage (or 1/4 teaspoon dried)
1 teaspoon fresh thyme (or 1/4 teaspoon dried)
1/8 teaspoon salt
pepper to taste
Sesame Potatoes
1 1/2 tablespoon butter
1 large onion, peeled and chopped
2 tablespoons sesame seeds
1 tablespoon minced parsley
1/4 teaspoon salt
pepper to taste
(A few drops of sesame oil may be used instead of seeds)
