For several years my husbands family gathered at
a piece of property owned by his parents for a week of camping. Everyone
looked forward to the big meal I would prepare for my night at cooking.
Since there were about 20 or more of us I would cook what I call "The Big
Pot Dinner".
My stepfather in-law would build a charcoal fire
in a cooking fire pit that was next to the large gathering fire pit. In
about an hour the coals would be ready. It took a whole small bag of charcoal.
In a large throw away roasting pan I would place a pork
roast, a beef roast, two whole chickens, salt and pepper and any other
seasoning I had brought like garlic, etc. On top of all that I would lay
the whole sweet potatoes, acorn squash, baking potatoes, and onions. Add
about 4 of tablespoons of butter and brown sugar on top. A little water
in the bottom helps to start the steam and prevent burning, about a cup.
Cover with a double thickness of foil. Cook over the fire for about 2 hours.
Set in the middle of the picnic table and let everyone help themselves.
This isn't a recipe that is written in stone as
you can see, but its easy and lots of fun for me to prepare.
