Hawaiian Spare Ribs

(serves 8)

 Trim any fat from the ribs; sprinkle with salt & pepper. Arrange the ribs with the bone side down over slow coals. Grill for about 20 minutes on the bone side and 10 minutes on the meat side.
 Prepare the basting sauce. Mix together the garlic, sugar, lemon juice, catsup, molasses, ginger, Tabasco sauce and strained fruit. cook this basting sauce 5 minutes over medium heat. Turn the ribs so that the bone sides are directly over the coals again, and continue to cook the ribs 30 minutes longer, basting frequently with the sauce. Cut into individual portions and serve hot.
